Ingredients
4 russet potatoes
2 Tbsps salt
0.5 cup water
1 Tbsp vegetable oil
4 oz goat cheese
2 Tbsp olive oil
2 Tbsp parsley
1 Tbsp shallots
0.5 tsp lemon zest
Cookware
- 1 wire rack
- 1 jelly roll pan
Instructions
Step 1
Preheat the oven to 450°F. Poke 6 holes in russet potatoes with fork, two holes on each side. Create a brine bath with salt and water. Coat the potatoes in the brine bath and place on a wire rack and jelly roll pan and cook for 45 to 60 minutes.
Step 2
Cook the potatoes until the inside temperature reaches 205°F.
Step 3
Coat the potatoes with vegetable oil and bake for an additional 10 minutes at 450°F.
Step 4
Remove the potatoes from the oven an immediately cut an X in them to release the steam.
Step 5
For the topping, combine goat cheese, olive oil, parsley, shallots, and lemon zest. Season to taste.
