Carrot Slaw¶

Ingredients¶
1 lb carrot
7 oz green cabbage
0.5 red onion
2 Tbsp olive oil
2 Tbsp apple cider vinegar
2 Tbsp mayonnaise
2 tsp honey
1 lemon juice
1 tsp Dijon mustard
some salt
some pepper
Cookware¶
- 1 large mixing bowl
Instructions¶
Step 1¶
Grate the carrot along the long edge to create long, thin strands.
Step 2¶
Grate or slice the green cabbage and red onion into thin strips.
Step 3¶
Add the olive oil, apple cider vinegar, mayonnaise, honey, lemon juice, Dijon mustard, and salt and pepper to a bowl. Mix well to combine.
Step 4¶
Transfer the vegetables to a large mixing bowl and pour the dressing over the top.
Step 5¶
Toss to combine.
Step 6¶
Serve with chopped spring onion on top (optional).
