Cauliflower Purée with Thyme¶

Ingredients¶
1 cup vegetable broth
1 tsp salt
2 lbs cauliflower
1.5 Tbsp butter1
some pepper
1 tsp thyme
Cookware¶
- 1 large pot
- 1 slotted spoon
- 1 food processor
- 1 strainer
Instructions¶
Step 1¶
In a large pot, bring the vegetable broth and salt to a boil. Add the cauliflower; bring back to a boil. Cover, reduce the heat to low and steam for 15 to 20 minutes, or until cauliflower is very tender.
Step 2¶
Strain the cauliflower using a strainer then use a slotted spoon to transfer the cauliflower to a food processor. Add 3 tablespoons of vegetable broth from the pot, along with the butter. Process until smooth.
Step 3¶
Taste and adjust seasoning with salt and freshly ground pepper. Add thyme and process until just combined.
