Green Rice¶

Ingredients¶
1 cup packed spinach
0.25 cup (10 g) packed cilantro
1 tsp salt
1.75 cup (397 g) water
1 Tbsp (12 g) olive oil
0.5 cup (48 g) yellow onion
2 cloves garlic
1 cup (28 g) basmati rice
Cookware¶
- 1 high-speed blender
- 1 medium saucepan
- 1 fork
Instructions¶
Step 1¶
In a high-speed blender, add the spinach, cilantro, salt, and 1.75 cups of water and blend until smooth.
Step 2¶
In a medium saucepan over medium heat, heat the olive oil. Add the yellow onion and garlic and cook, stirring occasionally, until the onions start to look translucent, about 5 minutes.
Step 3¶
Add the basmati rice and the blended spinach mixture and stir to combine.
Step 4¶
Increase the heat to high and bring to a boil. Cover, reduce the heat to low, and simmer until the water has been absorbed, 15 to 20 minutes.
Step 5¶
Remove from the heat, leaving the lid on the steam for an additional 5 minutes.
Step 6¶
Fluff with a fork and keep covered until serving.
