Greek Style Lemon Roasted Potatoes
- 1.5 lbs yellow potatoes
- 0.5 cup olive oil
- 1 cup chicken broth
- 2 tsp salt
- 2 tsp oregano
- 1 tsp paprika
- 0.5 tsp pepper
- 1 lemon juice
- 1 sprig rosemary
- some parsley (optional)
- 1 9x13" casserole or baking dish
Preheat oven to 400° F or 375°F if using convection.
Mix yellow potatoes, olive oil, chicken broth, salt, oregano, paprika, pepper, lemon juice, and rosemary in a 9x13" casserole or baking dish. Roast for 1 hour, gently stirring 2 to 3 times toward the end. After 1 hour, (or when they look 95% golden, turn off the oven and let them sit in the oven, turned off for 15 minutes.
Garnish with parsley (optional) if desired
