Maple Harissa Glazed Sweet Potatoes¶

Ingredients¶
3 large sweet potatoes
3 Tbsp olive oil
3 Tbsp maple syrup
2 Tbsp Traditional Tunisian Harissa
2 tsp salt
4 cloves garlic
0.5 cup TJ's sweet & spicy pecans
Cookware¶
- 1 mandoline or sharp knife
- 1 large bowl
- 1 10-inch pan
- 1 foil
Instructions¶
Step 1¶
Preheat the oven to 400°F.
Step 2¶
Wash sweet potatoes. Do not peel; leave skins on.
Step 3¶
Using a mandoline or sharp knife, thinly slice the potatoes and set aside.
Step 4¶
Add olive oil, maple syrup, Traditional Tunisian Harissa, and salt to a large bowl and mix until combined.
Step 5¶
Add potatoes to the bowl and toss until evenly coated in the mixture.
Step 6¶
In a 10-inch pan arrange potato slices upright and in a row. Repeat with the remaining empty space in the middle of the pan.
Step 7¶
Peel and slice the garlic and nestle between potato slices, evenly distributed throughout.
Step 8¶
Cover with foil and bake for 30 minutes.
Step 9¶
While baking, chop the TJ's sweet & spicy pecans. At the 30 minute mark, remove foil and sprinkle pecans over potatoes.
Step 10¶
Bake an additional 20 minutes, uncovered.
Step 11¶
Serve warm and enjoy!
