Roasted Delicata Squash

Ingredients
- 1 large delicata squash
- 1 Tbsp olive oil
- 1 tsp salt
- 0.13 tsp cayenne pepper
Sweet Variation
- 2 Tbsp maple syrup
- 2 Tbsp olive oil
- 1/2 tsp cinnamon
Cookware
- 1 spoon
- 1 rimmed baking sheet
- 1 parchment paper or a silicone mat
- 1 cutting board
- 1 large bowl
Instructions
Step 1
Cut the ends off of the delicata squash and cut in half lengthwise. Using a spoon, scrape out the seeds and filling.
Step 2
Preheat the oven to 450°F (232°C). Line a rimmed baking sheet with parchment paper or a silicone mat.
Step 3
Place squash halves cut-side down on a cutting board. Cut into 3/8-inch slices; transfer slices to a large bowl. Drizzle with olive oil; add salt and cayenne pepper. Toss until squash is well coated. Arrange squash in a single layer on the prepared baking sheet.
Sweet Variation
A sweet variable can be made by using maple syrup, olive oil, and cinnamon.
Step 4
Bake in the preheated oven until the bottoms are browned and squash is tender, 12 to 18 minutes.
