Beach Day Chickpea Salad

🧂 Ingredients

  • 🍇 0.25 cup (37 g) raisins
  • 🍎 1 can chickpeas, drained
  • 🍵 2 celery stalks, diced
  • 🌿 2 Tbsp chopped parsley
  • 🌱 2 Tbsp (14 g) whole grain mustard
  • 🍊 2 Tbsp (28 g) lemon juice
  • 🫒 2 Tbsp (25 g) olive oil
  • 🧂 some salt
  • 🧂 some pepper

📝 Instructions

Step 1

Soak the raisins in warm water for 5 minutes to soften, then drain.

Step 2

Coarsely chop the raisins and add them to the chickpeas, drained.

Step 3

Add celery stalks, diced, chopped parsley, whole grain mustard, lemon juice, olive oil, and salt and pepper to taste, and stir well to combine.
