Beach Day Chickpea Salad¶

Ingredients¶
0.25 cup (37 g) raisins
1 can chickpeas, drained
2 celery stalks, diced
2 Tbsp chopped parsley
2 Tbsp (14 g) whole grain mustard
2 Tbsp (28 g) lemon juice
2 Tbsp (25 g) olive oil
some salt
some pepper
Instructions¶
Step 1¶
Soak the raisins in warm water for 5 minutes to soften, then drain.
Step 2¶
Coarsely chop the raisins and add them to the chickpeas, drained.
Step 3¶
Add celery stalks, diced, chopped parsley, whole grain mustard, lemon juice, olive oil, and salt and pepper to taste, and stir well to combine.
