  • 🧀 1 Tbsp (4 g) nutritional yeast
  • 🧄 1 tsp garlic powder
  • 🍊 2 lemon juice
  • 🍯 1 Tbsp (20 g) maple syrup
  • 🌱 3 Tbsp (48 g) tahini
  • 💧 0.25 cup (57 g) water
  • 🧂 some salt
  • 🧂 some pepper
  • 🍎 2 cups (340 g) fresh blueberries
  • 🫘 1 can cooked chickpeas
  • 🥒 1 cup cucumber
  • 🍇 4 cups (840 g) red cabbage
  • 🥕 1 handful mixed salad greens
  • 🌰 0.25 cup (32 g) walnuts

📝 Instructions

Step 1

To make the tahini dressing, whisk nutritional yeast, garlic powder, lemon juice, maple syrup, tahini, water, and salt and pepper to taste together until smooth.

Step 2

Mix the fresh blueberries, cooked chickpeas, diced cucumber, finely sliced red cabbage, mixed salad greens, and chopped walnuts in a bowl. Top the salad with the tahini dressing.

Step 3

Serve and enjoy!
