Grilled Romaine Lettuce¶

Ingredients¶
0.5 cup (100 g) olive oil
0.25 cup balsamic vinegar
2 Tbsp (42 g) agave
0.5 tsp (1 g) fresh cracked pepper
2 heads romaine lettuce
1 olive oil
1 salt
1 pepper
0.5 cup (50 g) freshly grated Parmesan cheese
Cookware¶
- 1 small bowl
- 1 refrigerator
- 1 grill
- 1 large bowl
Instructions¶
Step 1¶
In a small bowl, whisk olive oil, balsamic vinegar, agave, and fresh cracked pepper together for the vinaigrette. Store in the refrigerator until ready to use.
Step 2¶
Fire up the grill (or Weber Smokey Mountain cooker set up for direct grilling, one zone).
Step 3¶
Lightly drizzle the cut side of romaine lettuce (washed and halved lengthwise) with olive oil, then season with salt and pepper to taste.
Step 4¶
Place the romaine halves onto the grill cut side down. Grill checking the underside frequently until a nice char forms, about 1 to 2 minutes. Flip and grill the other side for 1 to 2 minutes.
Step 5¶
Remove from the grill and sprinkle freshly grated Parmesan cheese over each half on the cut side, then drizzle with the balsamic vinaigrette. Alternatively, chop the grilled lettuce, transfer to a large bowl, and toss with the Parmesan cheese and balsamic vinaigrette before serving.
