Ingredients¶
2 large English cucumbers
0.25 tsp salt
0.25 cup (57 g) light sour cream
3 Tbsp (43 g) low-fat plain strained yogurt
1.5 Tbsp (32 g) cider vinegar
1 Tbsp (11 g) chopped fresh dill
0.25 tsp salt
0.5 tsp (2 g) ground pepper

Instructions¶
Step 1¶
Using a mandoline, thinly slice English cucumbers (unpeeled). Arrange the cucumber slices in a single layer on paper towels or a clean kitchen towel. Sprinkle with salt; let stand until the cucumbers release some of their moisture and look glossy, about 15 minutes.
Step 2¶
Meanwhile, whisk light sour cream, low-fat plain strained yogurt (Greek-style), cider vinegar, chopped fresh dill, the remaining salt, and ground pepper together in a large serving bowl until smooth. Refrigerate until ready to use.
Step 3¶
Pat the cucumbers dry with clean paper towels or a clean kitchen towel. Add the cucumbers to the dressing and toss to coat evenly. Garnish with additional dill and pepper, if desired. Serve immediately.
