Strawberry Protein Bites

Ingredients - Dough
- 6 pitted medjool dates
- 0.25 cup hazelnuts
- 0.75 cup cashews
- 1 cup freeze-dried strawberries
- 2 Tbsp maple syrup or honey
- 3 Tbsp strawberry protein powder
Ingredients - Coating
- 1.5 cups freeze-dried strawberries
Cookware
- 1 food processor
- 1 food processor or high-speed blender
Instructions
Step 1
Soak pitted medjool dates in hot water for 10 minutes then drain any excess liquid.
Step 2
Add hazelnuts and cashews to a food processor. Grind to create a fine flour.
Step 3
Mix in dates, freeze-dried strawberries, maple syrup or honey, and strawberry protein powder and process to form into a sticky dough.
Step 4
Scoop out a portion of dough and roll between your palms to form a bite-size hall Repeat with the remaining dough to create approximately 15 bites.
Step 5
Pulse the freeze-dried strawberries in a food processor or high-speed blender to create a powder. Roll the bites in the powder to coat them.
Step 6
Store in an airtight container and refrigerate.
