Roasted Delicata Squash

  • ๐Ÿฅ’ 1 large delicata squash
  • ๐Ÿซ’ 1 Tbsp olive oil
  • ๐Ÿง‚ 1 tsp salt
  • ๐ŸŒถ 0.13 tsp cayenne pepper

  • ๐Ÿ 2 Tbsp maple syrup
  • ๐Ÿซ’ 2 Tbsp olive oil
  • ๐Ÿฎ ½ tsp cinnamon

๐Ÿณ Cookware

  • 1 spoon
  • 1 rimmed baking sheet
  • 1 parchment paper or a silicone mat
  • 1 cutting board
  • 1 large bowl

๐Ÿ“ Instructions

Step 1

Cut the ends off of the delicata squash and cut in half lengthwise. Using a spoon, scrape out the seeds and filling.

Step 2

Preheat the oven to 450ยฐF (232ยฐC). Line a rimmed baking sheet with parchment paper or a silicone mat.

Step 3

Place squash halves cut-side down on a cutting board. Cut into ⅜-inch slices; transfer slices to a large bowl. Drizzle with olive oil; add salt and cayenne pepper. Toss until squash is well coated. Arrange squash in a single layer on the prepared baking sheet.

Sweet Variation

A sweet variable can be made by using maple syrup, olive oil, and cinnamon.

Step 4

Bake in the preheated oven until the bottoms are browned and squash is tender, 12 to 18 minutes.
