Lemony Lentil Soup

Ingredients
1 Tbsp olive oil
1 medium onion
2 medium carrots
5 cloves garlic
6 cups vegetable stock
1.5 cups red lentils
0.67 cup corn
2 tsp cumin
1 tsp curry
1 pinch saffron
1 pinch cayenne
some salt
some pepper
1 lemon zest and juice
Cookware
- 1 large pot
- 1 immersion blender
Instructions
Step 1
Heat olive oil in a large pot. Sauté chopped onion and diced carrots for 5 minutes.
Step 2
Add minced garlic and sauté for 1 minute more.
Step 3
Stir in vegetable stock, dried red lentils, corn, cumin, curry, saffron, cayenne, salt and pepper.
Step 4
Bring to a boil then simmer for 15 minutes.
Step 5
Blend with immersion blender and add zest and juice of 1 lemon.
