🧂 Ingredients

  • 🫒 1 Tbsp olive oil
  • 🧅 1 medium onion
  • 🥕 2 medium carrots
  • 🧄 5 cloves garlic
  • 🍲 6 cups vegetable stock
  • 🌾 1.5 cups red lentils
  • 🌽 0.67 cup corn
  • 🌿 2 tsp cumin
  • 🍛 1 tsp curry
  • 🌷 1 pinch saffron
  • 🫑 1 pinch cayenne
  • 🧂 some salt
  • 🧂 some pepper
  • 🍋 1 lemon zest and juice

🍳 Cookware

  • 1 large pot
  • 1 immersion blender

📝 Instructions

Step 1

Heat olive oil in a large pot. Sauté chopped onion and diced carrots for 5 minutes.

Step 2

Add minced garlic and sauté for 1 minute more.

Step 3

Stir in vegetable stock, dried red lentils, corn, cumin, curry, saffron, cayenne, salt and pepper.

Step 4

Bring to a boil then simmer for 15 minutes.

Step 5

Blend with immersion blender and add zest and juice of 1 lemon.
