:peanut: Slow Cooker Vegan African Peanut Stew

Ingredients
- 1 15-oz can chickpeas (drained)
- 4 cups vegetable broth
- 0.5 tsp salt
- 1 tsp cumin
- 0.5 tsp coriander
- 0.25 tsp cayenne
- 1 15-oz can diced tomatoes
- 0.5 cup peanut butter
- 5 cups sweet potatoes, cut into 2" cubes
- 1 onion, diced
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 4 handfuls spinach
Cookware
- 1 slow cooker
- 1 immersion blender
Instructions
Step 1
Put chickpeas (drained), vegetable broth, salt, cumin, coriander, cayenne, diced tomatoes, peanut butter, sweet potatoes, cut into 2" cubes, onion, diced, garlic, minced, and ginger, grated in slow cooker.
Step 2
Cook on low for 6 to 8 hours.
Step 3
Stir in spinach just before serving and cook 15 minutes more.
Step 4
Use immersion blender to thicken to taste. Serves 6.
