Slow Cooker Vegan African Peanut Stew

🧂 Ingredients

  • 🧆 1 15-oz can chickpeas (drained)
  • 🍲 4 cups vegetable broth
  • 🧂 0.5 tsp salt
  • 🌿 1 tsp cumin
  • 🌿 0.5 tsp coriander
  • 🌶 0.25 tsp cayenne
  • 🍅 1 15-oz can diced tomatoes
  • 🥜 0.5 cup peanut butter
  • 🍠 5 cups sweet potatoes, cut into 2" cubes
  • 🧅 1 onion, diced
  • 🧄 4 cloves garlic, minced
  • 🍠 1 inch ginger, grated
  • 🥬 4 handfuls spinach

🍳 Cookware

  • 1 slow cooker
  • 1 immersion blender

📝 Instructions

Step 1

Put chickpeas (drained), vegetable broth, salt, cumin, coriander, cayenne, diced tomatoes, peanut butter, sweet potatoes, cut into 2" cubes, onion, diced, garlic, minced, and ginger, grated in slow cooker.

Step 2

Cook on low for 6 to 8 hours.

Step 3

Stir in spinach just before serving and cook 15 minutes more.

Step 4

Use immersion blender to thicken to taste. Serves 6.
