Vegan Mushroom Stew

🧂 Ingredients

  • 🫒 3 Tbsp olive oil
  • 🧅 1 yellow onion
  • 🥕 1 cup carrot
  • 🥬 1 cup celery
  • 🧂 some salt
  • 🧂 some pepper
  • 🍄 1 lb mushrooms
  • 🧄 6 cloves garlic
  • 🌿 2 tsp thyme
  • 🌿 1 tsp oregano
  • 🌿 0.5 tsp sage
  • 🌾 2 Tbsp all-purpose flour
  • 🍶 0.25 cup balsamic vinegar
  • 🥡 2 Tbsp soy sauce
  • 🥔 1 lb yellow potatoes
  • 🍛 1 cup split red lentils
  • 🍅 1 15-oz can tomato sauce
  • 🍲 3 cups vegetable broth
  • 🍂 2 bay leaves
  • 🌿 some parsley

📝 Instructions

Step 1

Heat olive oil in a large pot over medium heat. Add yellow onion, carrot, celery, and a couple of pinches of salt and pepper.

Step 2

Cook 8 minutes, stirring occasionally. Add mushrooms, garlic, thyme, oregano, and sage.

Step 3

Cook 3 to 4 minutes, stirring frequently.

Step 4

Add all-purpose flour; cook and stir for 1 minute.

Step 5

Deglaze with balsamic vinegar and soy sauce.

Step 6

Add yellow potatoes, split red lentils, tomato sauce, vegetable broth, and bay leaves.

Step 7

Cook to just below boiling over medium-high heat, stirring occasionally.

Step 8

Reduce heat; simmer 10 to 15 minutes or until potatoes are fork-tender. Season with salt and pepper.

Step 9

Remove bay leaves and garnish with parsley.

Step 10

Tip: Serve with mashed potatoes and bread.
