Cauliflower Green Bean Mac & Cheese

Ingredients
- 1 Tbsp apple cider vinegar
- 1 tsp cumin
- 1 tsp garam masala
- 0.5 tsp turmeric
- 0.25 tsp ground ginger
- 0.5 tsp salt
- 8 oz green beans
- 1 pkg cauliflower florets
- 1 12-oz pkg red lentil pasta
- 3 Tbsp toasted crushed almonds
- 0.25 cup raisins
- some cilantro

- 1 large bowl
- 1 baking
Instructions
Step 1
Preheat oven to 425°F.
Step 2
In a large bowl, mix together apple cider vinegar, cumin, garam masala, turmeric, ground ginger, and salt. Add 1 Tbsp water, then toss mixture over green beans, and cauliflower florets. Mix to coat. Place on a baking sheet and roast 20 to 25 minutes.
Step 3
Meanwhile, prepare red lentil pasta, reserving 1 cup of cooked pasta water. Add Forks Over Knives White Mac and Cheese sauce and pasta water to thin.
Step 4
Add veggies, toasted crushed almonds, and raisins and mix together. Top with chopped cilantro
