Game Changers Oat & Lentil Meatloaf¶

Ingredients¶
2 stalks celery
0.5 onion
2 cloves garlic
10 oz firm tofu
0.25 cup walnuts
0.5 cup brown lentils
1.25 cups quick-cooking oats
0.5 tsp thyme
0.5 rosemary
2 Tbsp soy sauce
1 Tbsp Dijon mustard
2 tsp parsley
0.5 tsp sage
2 Tbsp BBQ sauce
Cookware¶
- 1 skillet
- 1 large bowl
- 1 loaf pan
- 1 foil
Instructions¶
Step 1¶
Preheat oven to 375°F. Sauté the celery, chopped onion, and minced garlic on high heat in a skillet with a few drops of water for 5 minutes, until tender. Remove from heat and cool.
Step 2¶
Mash drained firm tofu in a large bowl. Stir in cooked mixture and walnuts, cooked brown lentils, quick-cooking oats, thyme, rosemary, soy sauce, Dijon mustard, parsley, and sage and combine well.
Step 3¶
Spray a loaf pan with non-stick spray and spoon in the mixture. Top with a layer of BBQ sauce.
Step 4¶
Cover with foil and bake for 45 minutes, then remove foil and bake 10 minutes more.
Step 5¶
Best if allowed to fest for at least 1 hour.
