Greens & Grains Bowls

Ingredients
4 cups brown rice
4 cups sweet potato
1 15-oz can black beans
2 cups bell pepper
6 cups raw spinach or kale
1.5 cups fresh or frozen mango chunks
4 Tbsp flax seed meal
4 Tbsp red wine vinegar
1 Tbsp chopped shallot
1 tsp Dijon mustard
1 tsp salt
0.5 cup water
2 Tbsp maple syrup

- 1 blender
Instructions
Step 1
In a large bowl, mix together cooked brown rice, cooked sweet potato, black beans, chopped bell pepper, and raw spinach or kale.
Step 2
In a blender, combine fresh or frozen mango chunks, flax seed meal, red wine vinegar, chopped shallot, Dijon mustard, salt, water, and maple syrup.
Step 3
Puree until very smooth. Pour over rice and bean mixture. Combine well and serve.
