Lentil Patties

Ingredients
1 cup dry lentils
2.5 cups water
1 tsp salt
0.5 medium onion
1 carrot
1 Tbsp olive oil
1 tsp pepper
some salt
1 Tbsp soy sauce
0.75 cup rolled oats
0.75 cup bread crumbs
2 eggs (optional)

Instructions
Step 1
Preheat the oven to 400°F.
Step 2
Boil the dry lentils in the water with the salt for about 45 minutes. The lentils will be soft and most of the water will be gone.
Step 3
Fry the diced onion and diced carrot in the olive oil until soft, about 5 minutes.
Step 4
In a bowl, combine the pepper, salt, soy sauce, rolled oats, and bread crumbs. Add the cooked ingredients to the bowl and toss combine.
Step 5
While still warm, form the mixture into patties. Add eggs (optional) if the mixtures is not sticking together.
Step 6
Burgers can be then shallow fried for 1 to 2 minutes on each side or baked at 400°F for 15 minutes.
