Meat-Free Meat Loaf¶

Ingredients¶
1 small onion
1 small carrot
0.5 cup ground walnuts
1 cup bread crumbs
1 cup brown lentils
0.25 cup soft tofu
2 Tbsp tahini
1 Tbsp soy sauce
1 Tbsp parsley
1 pkg TJ's soy meat
some salt
some pepper
Cookware¶
- 1 9x5" loaf pan
- 1 skillet
- 1 bowl
- 1 food processor
- 1 pan
- 1 foil
Instructions¶
Step 1¶
Preheat the oven to 350°F.
Step 2¶
Lightly oil a 9x5" loaf pan.
Step 3¶
Heat oil in a skillet and sauté minced onion and grated carrot for 5 to 7 minutes.
Step 4¶
In a bowl, mix soy meat, ground walnuts, bread crumbs, and the onion mixture.
Step 5¶
Pulse cooked brown lentils in a food processor then add to soy meat mixture.
Step 6¶
In a food processor, mix soft tofu, tahini, soy sauce, and minced parsley. Stir into the TJ's soy meat and season with salt and pepper.
Step 7¶
Mix in extra soy sauce and water as needed until desired texture is reached (add roughly ¼ cup extra liquid at a time).
Step 8¶
Transfer to the prepared pan. Smooth the top of the loaf.
Step 9¶
Cover with foil and bake for 45 minutes.
Step 10¶
Remove foil and bake for 7 to 10 minutes more.
