Meatless Umami Shepherd's Pie

Ingredients
3 Tbsp unsalted butter
1 container TJ's mirepoix
1 pkg TJ's beefless beef
1 bag mushroom medley
2 Tbsp tomato paste
2 Tbsp all-purpose flour
2 cups vegetable broth
3 Tbsp TJ's Mushroom and Company Multipurpose umami seasoning
1 cup peas
1 pkg TJ's prepared mashed potatoes

- 1 12-inch cast iron pan or oven-safe pan
Instructions
Step 1
Preheat oven to 375°F.
Step 2
To a 12-inch cast iron pan or oven-safe pan, heat over medium high and add unsalted butter. When butter has melted, add TJ's mirepoix and cook until softened, 5 to 7 minutes.
Step 3
Add TJ's beefless beef and mushroom medley until cooked through, about 5 minutes.
Step 4
Add tomato paste and mix to combine. Then add all-purpose flour and mix to combine.
Step 5
Add vegetable broth and TJ's Mushroom and Company Multipurpose umami seasoning and cook until thickened, about 5 minutes.
Step 6
Add peas and mix to combine. Then top with TJ's prepared mashed potatoes.
Step 7
Bake for 30 minutes.
Step 8
Cool for 15 minutes, before serving.
