Spicy Cashew Quinoa Salad
- 2 cups quinoa
- 1 bag TJ's Organic Shredded Green & Red Cabbage with Orange Carrots
- 1 pkg TJ's Shelled Edamame with Sea Salt
- 1 red bell pepper
- 0.5 bunch cilantro
- 1 pkg sriracha tofu
- 3 green onions
- 0.5 cup TJ's Spicy Cashew Butter Dressing
- 0.5 cup TJ's Chile & Garlic Cashews
- 1 lime
- 1 large bowl
Combine cooked quinoa, TJ's Organic Shredded Green & Red Cabbage with Orange Carrots, TJ's Shelled Edamame with Sea Salt, cored and diced red bell pepper, cilantro with stems removed, sriracha tofu, and thinly sliced green onions in a large bowl. Add 1/2 cup TJ's Spicy Cashew Butter Dressing and gently stir to coat. Taste and adjust dressing as desired. Stir in crushed TJ's Chile & Garlic Cashews.
To serve, spoon salad into shallow bowls and top with a squeeze of fresh lime juice.
