Vegan Baked Beans

🧂 Ingredients

  • 🥔 16 oz dried great northern beans
  • 🥔 2 cups bean juice
  • 🍲 2 cups vegetable broth
  • 🧅 1 onion
  • 🧄 4 cloves garlic
  • 🌶 0.5 jalapeno pepper
  • 🫑 1 green bell pepper
  • 🧂 1 tsp salt
  • 🍅 6 oz tomato paste
  • 🍁 0.25 cup molasses
  • 🍁 0.25 cup brown sugar
  • 🌭 1 Tbsp yellow mustard
  • 🍎 1 tsp apple cider vinegar
  • 🧂 0.25 tsp ground pepper
  • 🌶 0.25 tsp chipotle chili powder
  • 🌶 1 tsp chipotle in adobo (alternative)

🍳 Cookware

  • 1 crock pot (optional)

📝 Instructions

Step 1

Soak dried great northern beans overnight in several inches water.

Step 2

Drain and rinse beans next morning.

Step 3

Add enough water to cover and bring to a boil.

Step 4

As soon as the beans begin to boil, remove from heat and cover.

Step 5

Let rest 30 minutes.

Step 6

Drain and rinse beans, reserving 2 cups bean juice.

Step 7

Add beans back into pot, with 2 cups bean juice.

Step 8

Add vegetable broth, diced onion, garlic, jalapeno pepper, finely diced green bell pepper and salt.

Step 9

Bring to a boil again and simmer on low for 1 hour.

Step 10

Add mixture to crock pot (optional).

Step 11

Add tomato paste, molasses, brown sugar, yellow mustard, apple cider vinegar, ground pepper, and chipotle chili powder or chipotle in adobo (alternative) and slow cook on low 2 to 4 hours.
