Lemony Broccoli Salad with Chickpeas & Feta¶

Ingredients¶
3 Tbsp olive oil
6 cups (540 g) broccoli florets
3 cups (450 g) peas
some salt
some pepper
1 15-oz can chickpeas
0.75 cup (85 g) feta cheese
1 tsp lemon zest
0.5 lemon juice
1 tsp olive oil
Cookware¶
1 large skillet
1 bowl
Instructions¶
Step 1¶
Heat a large skillet over medium heat and add 3 Tbsp olive oil and the broccoli florets.
Step 2¶
Cook for 5 minutes, then add the peas. Season with salt and pepper and cook for 2 to 3 minutes more.
Step 3¶
Pour veggies into a bowl and cool for 10 minutes. Add chickpeas, crumbled feta, lemon zest, lemon juice, and olive oil.
