Lemony Broccoli Salad with Chickpeas & Feta

🧂 Ingredients

  • 🫒 3 Tbsp olive oil
  • 🥦 6 cups (540 g) broccoli florets
  • 🫘 3 cups (450 g) peas
  • 🧂 some salt
  • 🧂 some pepper
  • 🫘 1 15-oz can chickpeas
  • 🧀 0.75 cup (85 g) feta cheese
  • 🍊 1 tsp lemon zest
  • 🍊 0.5 lemon juice
  • 🫒 1 tsp olive oil

  • 🥘 1 large skillet
  • 🥣 1 bowl

📝 Instructions

Step 1

Heat a large skillet over medium heat and add 3 Tbsp olive oil and the broccoli florets.

Step 2

Cook for 5 minutes, then add the peas. Season with salt and pepper and cook for 2 to 3 minutes more.

Step 3

Pour veggies into a bowl and cool for 10 minutes. Add chickpeas, crumbled feta, lemon zest, lemon juice, and olive oil.
