Vegetable Casserole¶

Ingredients¶
1 cup (150 g) zucchini
1 large tomato
1 medium onion
0.33 cup (35 g) Parmesan cheese
0.5 cup (60 g) reduced-fat Bisquick
1 cup (227 g) fat-free milk
0.5 cup (115 g) egg substitute
some salt
some pepper

1 9-inch pie plate
Instructions¶
Step 1¶
Heat oven to 400°F.
Step 2¶
Grease a 9-inch pie plate.
Step 3¶
Layer chopped zucchini, chopped tomato, onion, and Parmesan cheese. Stir reduced-fat Bisquick, fat-free milk, egg substitute, salt and pepper to taste until blended, then pour into pie plate.
Step 4¶
Bake for 35 minutes.
