Key Lime Pie Energy Balls¶

Ingredients¶
1 cup (149 g) Medjool dates
0.75 cup (74 g) rolled oats
0.5 cup (56 g) cashews
0.25 cup (21 g) shredded coconut
3 Tbsp (19 g) graham cracker crumbs
2 limes
2 Tbsp (28 g) lime juice
1 tsp (5 g) vanilla extract
some shredded coconut

Instructions¶
Step 1¶
Add pitted Medjool dates, rolled oats (old-fashioned), cashews, unsweetened shredded coconut, graham cracker crumbs, the grated zest of limes, fresh lime juice, and vanilla extract to a food processor. Blend until the mixture looks sticky and holds together when pressed between your fingers, about 1 to 2 minutes. If the mixture feels too dry, add 1 more date or a small splash of lime juice.
Step 2¶
Scoop about 1 tablespoon of mixture at a time and roll into balls.
Step 3¶
Roll the balls in additional shredded coconut mixed with extra lime zest so the zest sticks to the outside.
Step 4¶
Place them on a plate or tray and chill in the fridge for about 20 minutes until slightly firm.
